"First you Chop the Wood" was the original name of our little bakery. We wanted our customers to have a sense of stepping back into time, to have an archeological experience of tasting bread as it once must have been, ancestral breads, almost lost art breads. But as a name, it was a little awkward. Since our breads, pastries and all our foods have their roots in the soil of our farm on the west side of Petaluma, we thought the name Della Fattoria—of the farm—was fitting since it says what we want to say...good food, slow food, food that honors "place" and the culture and culinary bounty that surrounds us.
